Delicious Vegan Buttermilk Pancakes Perfect for Any Breakfast Table

There's nothing quite like starting your morning with a stack of warm, fluffy buttermilk pancakes that are bursting with rich, comforting flavors. Whether you're cooking for a leisurely weekend breakfast or simply craving a cozy treat, these pancakes offer the perfect balance of lightness and indulgence that will have everyone at the table asking for seconds. In this blog post, we'll share a simple yet delicious recipe that transforms everyday ingredients into a breakfast masterpiece that's sure to brighten your day.
These can be made gluten free.

Ingredients
1 cup flour of choice (choose 1):
Whole wheat
All purpose gluten free
All purpose wheat four
Oat flour
1 tbsp baking powder
1 pinch of salt
1 cup plant based milk
1 tbsp apple cider vinegar
1 tbsp maple syrup
1 tsp vanilla bean paste or extract
Instructions
Add the apple cider vinegar to the plant based milk and set aside for 10 minutes before adding to the dry ingredients.
Measure and mix the dry ingredients together in a large bowl.
Add wet ingredients and mix until just combined.
Set the batter aside for 30 minutes at room temp.
Letting it rest will allow more flavors and perfect cooking.
After resting, use a ladle to pour the pancakes into the pan.
Serve with fruit or just with syrup.
Notes
Mix ins
If desired, you can add 1/2 cup of mix ins to the batter. Here is a list of options (pick one or two):
Diced strawberries
Blueberries
Raspberries
Diced bananas
Diced mangoes
Diced apples
Diced pears
Diced kiwi
Broken cookies
Chocolate chips
Fruit can be fresh or frozen. If you use frozen, add an extra 1-2 tbsp of flour.
Leftover storage
If you have any leftovers, butter them, place them on a parchment-lined baking sheet, and freeze them. Once they're frozen, you can move them to a Ziploc bag. They will last in the freezer for up to 6 months.
To reheat, place them on a microwave-safe plate and microwave on high for 1 minute and 30 seconds or 2 minutes 30 seconds for 2 or more stacked. Add syrup or enjoy them plain. The butter added before freezing keeps the pancakes soft and moist. They taste the same as when they were fresh.
This method is also great for meal prepping.
Serving
These can be served with fruit on top, some syrup, a side of vegan eggs, sausage, or bakon. These are your pancakes and enjoy them how you want to!
