Quick and Easy Vegan 7 Layer Bars

Each Christmas, my family prepares 7 layer bars. These are among the simplest desserts to create with minimal effort. This straightforward recipe is quick to make and will impress your guests with a treat that appears time-consuming but is actually quite easy.


This recipe has been passed down in my family for a few generations. It was created as a simple and quick dessert that my great-grandmothers could prepare during the week for church events during the holidays. The original recipe included animal products, but I have developed this vegan version.


Recipe can be made gluten free using Schar graham crackers.



Ingredients

1 standard bag of vegan chocolate chips

1 standard bag of vegan butterscotch or caramel chips

1-1.5 cups of chopped walnuts and/or pecans (I usually use pecans)

1 small bag of shredded coconut

1.5 cups of crushed vegan or honey graham crackers

1 can of vegan sweetened condensed coconut milk

1 stick of melted vegan butter (about 1/2 cup)


Instructions

  1. Preheat oven to 350F degrees.

  2. Place the graham crackers into a food processor and blend until they are a fine crumb.

  3. Mix the graham crackers with the melted butter and spread along the bottom of a parchment lined 13x9 pan.

  4. Next add the chopped pecans and/or walnuts evenly across the graham cracker layer.

  5. Spread the baking chips evenly throughout the pan.

  6. Add the coconut on top evenly.

  7. Open and mix the can of sweetened condensed coconut milk.

  8. Pour the can of milk over the top of the coconut.

  9. Bake for 30-35 minutes. The top of the bars should look toasted. If it isn't, put back in the oven for another 5 minutes.

  10. Once baked, leave the mixture in the pan to cool completely. Once cooled, place in the fridge for an hour before cutting.
