Indulge in a Tropical Escape with an Island Inspired Mocha

This vegan mocha recipe was inspired by the mochas I enjoyed at Lava Java in Maui. They were amazing and provided one of the best starts to my mornings, aside from the sea and waves.

Mocha Powder
Ingredients
1 cup cocoa powder (I use cacao powder)
1/2c-2/3c coconut sugar
Add the amount based on how you like your sweetness. If you like it sweeter, you could go up to 3/4 or 1c if preferred.
2-3 tsp sea salt
Instructions
Place all in preferred storage container and mix thoroughly. I usually put the lid on and shake very well. Open and verify the powders are mixed.
Mocha powder can be used for hot chocolate or mochas.
Mocha
Ingredients
2 shots of brewed espresso
1-1.5 tbsp of mocha powder (add the amount based on how chocolately you would like)
1/2-3/4 cup Plant milk of choice
It is recommended to use Coconut or Macadamia
Instructions for iced mocha
Brew the 2 shots of espresso
While waiting for the shots to pour, add a small amount of plant milk to the cup the beverage is going in.
Next add the mocha powder.
Once the shots are done, add them to the cup and mix thoroughly.
Now add the remaining milk.
Add as many ice cubes as you would like. Too many will water it down too much and too few may not cool it down. The amount will vary based on size of cup and size of the cubes.
Instructions for hot mocha
Pour 3/4-1 cup of plant milk into a microwave safe dish.
Microwave milk on high for 1 minute 50 seconds for hot, 2 minutes 30 seconds for extra hot.
Brew 2 shots of espresso.
While waiting on the espresso to brew, add the mocha powder to the hot plant milk.
Once the espresso is done, add the shots to the milk and mocha powder.
Stir thoroughly and then transfer to the mug (unless you made it in the mug then skip this step).
Notes
The mocha can be prepared iced the night before. Add the ice cubes just before drinking.
If you like, you can top it with vegan whip.
