Delicious Tofu Scrambled "Eggs" Recipe for a Healthy Breakfast

Tofu can be used to make scrambled "eggs". As a vegan, I like eating eggs but prefer not to consume real ones. If you have leftover vegetables in your fridge, tofu that needs to be used, or are seeking an alternative to animal eggs, this recipe is ideal for you.


It's straightforward, easy to prepare, and very fast. Just as quick and satisfying as the animal-based version.

Ingredients

1 block of tofu crumbled or cut into patties

Olive oil to coat the pan for cooking tofu

1/2 cup soy milk

2-3 tbsp of nutritional yeast (nooch)

Pinch of sea salt

Pinch of cracked pepper (rainbow or black)

1/4-1/2 tsp of garlic powder

1/4-1/2 tsp of smoked paprika (other spices can be used instead, season how you like)

1/2-1 tsp black sea salt


Instructions

  1. Saute the tofu in the pan until lightly browned.

  2. While cooking the tofu, measure the soy milk and add the nooch and spices (add only 1/2 tsp of black sea salt to this mixture).

  3. When the tofu is half way cooked or brown on all sides (up to you how cooked you want it), add the milk mixture to the pan.

  4. Constantly stir until the liquid is absorbed.

  5. Once the liquid is half absorbed, you can add in your veggies if they are cooked. Do not add veggies if making patties.


Notes

  1. Tofu can be sliced into patties for sandwiches or bread instead of being crumbled. It's also enjoyable as a snack in patty form.


  1. Vegetables can enhance the scramble. The following can be used:

    • Bell pepper

      • Add when most of the liquid is absorbed in the pan to retain the vegetable's crunch.

    • Potatoes

    • Onions (any variety except green)

      • Add while cooking the tofu before the liquid mixture, or pre-cook them.

    • Leeks

    • Parsnips

    • Carrots

    • Sweet potatoes

    • Yams

    • Squash

    • Zucchini

    • Broccoli

    • Cauliflower

    • Spinach

    • Cabbage (red or green)

    • Jalapeno

Notes on vegetables:

  • If adding vegetables other than bell pepper, they should be cooked first. This can be done in the pan before adding the tofu, or cooked in the microwave, air fryer, or roasted in the oven.

  • This recipe is excellent for using leftover vegetables.


  1. Black sea salt can be bought in bulk at an Asian market for less than at other markets for the same brands.


  1. Add a salsa to it for more flavor.


  1. Alternative plant milks that can be used instead of soy milk:

    • Oat milk

    • Nut milks (any)

      • Almond works best for this recipe. I have also made it with macadamia and pistachio.

    • Drinking coconut milk

      • Not the kind that comes in a can and it shouldn't have strong flavor.

  • Breakfast tacos, burritos, or quesadillas

  • Breakfast bowls

  • Served with a side of vegan bakon, waffles, or pancakes

  • Breakfast pizza

  • Bagel sandwiches

  • Served on toasted bread with some avocado and cucumbers

  • Breakfast sandwiches

  • Served on with with latkes (I call these breakfast latkes)

  • Serve it with hashbrowns
